Green Mango and Pine Nuts Salad with Homemade Dressing

You can have an endless list of ingredients when making a fresh salad but it's the mango/pine nuts and our honey-Dijon mustard dressing combination that makes this salad to stand out.

Ingredients

Green leaves mix

  • 2 - 3 types of vegetable peppers, tomatoes, cucumber, radishes etc.
  • Mango
  • Pine nuts
  • Pumpkin seeds

Honey-mustard dressing

  • 2 tbs virgin olive oil
  • 1 tbs red wine vinegar
  • 1 teaspoon dijon mustard
  • 3 teaspoon honey

Instructions

  • Make salad dressing by mixing all ingredients in a small container with a lid so you can shake it (a small jar with a lid is ideal).
  • Chop the vegetables.
  • Peel and cut the mango.
  • Tip the leaves, vegetable and fruit into a bowl but don't mix it.
  • Pour the dressing over the salad.
  • Sprinkle with nuts and seeds.
  • Tip: mix the salad directly before serving otherwise the leaves won’t look fresh.
